Friday Food Finds: Goat’s Milk Butter
I was introduced to Coach Farms several years ago when I worked for a Chef who routinely featured their cheeses on his menu. Located in Hudson Valley, New York this cheesemaker produces award winning, artisanal goat cheeses that are reminiscent of those found in France. In addition to both fresh and aged cheese, they also produce a line of products incorporating goat’s milk. One of my favorite’s is their butter, which is both lower in fat and lighter in texture than that made from cow’s milk. In addition to its health benefits, and it also has the unmistakeable flavor akin to a mild goat’s cheese. This makes it an excellent flavoring agent, and I often use it on top of fish baked in parchment paper with fresh spinach and roasted cherry tomatoes.
