    This dish looks delightful, and a nice change from Indian curries! Could you recommend some vegetarian Vietnamese dishes we should look for on our travels?

      Thanks Tiffani! Vietnam has some great vegetarian options because many of its citizens are buddhists. You will find some delicious curries as well as interesting vegetables you may not see elsewhere, such as water spinach. A signature dish in Vietnamese cuisine are meals cooked in clay pots, and you can often find vegetarian versions. Soft springrolls made with rice paper can also be found substituting tofu for the shrimp. Eggplant dishes are also very common and I will be posting a recipe soon for garlic eggplant that I learned at Ms. V’s cooking class in Hue.
